These bars will make any ordinary day feel like your birthday!
I’m a big fan of all things sweet, but I tryyy to have some self control. Around 2 p.m. every afternoon, I’m looking all around the office for something to satisfy my sweet tooth. So lately, I’ve been keeping a stock pile of energy/protein bars in my desk. While those are delish (looking at you Lemon Luna bar), I figured there had to be something I could create at home.. in bulk.. for a fraction of the price.
So.. I went to my trusty friend, the internet, to help me solve this problem. As I perused the world wide web, I started to figure out some ingredients that would make for a quality, flavorful afternoon snack.
I figured for my first attempt at homemade energy bars, I should start with something simple. But, don’t get it twisted, simple does not mean boring. Boy, oh, boy.. these Birthday Cake Bars are anything but boring.
Using bits and pieces from a few recipes, I put together my new favorite mid-day pick-me-up (that also doubles as a after dinner dessert).
2 cups rice crispies
1 cup oat flour
1 scoop protein powder
1/2 tsp salt
6 tbsp cashew butter
1/2 cup honey
2 tsp pure vanilla extract
In a bowl, combine all the dry ingredients. In a separate bowl, mix together the wet ingredients to form a thin paste. Then stir together all ingredients to form a batter. Next, line an 8×8 pan with parchment paper, and smooth the batter into the pan, pressing it down as hard as you can. Finally, freeze to harden and then cut into bars.
